Delicate, nourishing, and naturally refreshing, this Bird’s Nest with Snow Pear dessert soup is a beloved Chinese tonic often enjoyed for its soothing and hydrating qualities. The sweetness of Snow Pear pairs beautifully with the silky texture of Bird’s Nest, while red dates and goji berries add gentle sweetness and depth. Light yet luxurious, this comforting dessert is perfect served warm or chilled, especially on hot Singapore days or as a restorative treat after meals.

INGREDIENTS


  • 8–10g dried bird’s nest

  • 2 medium snow pears, peeled and cored

  • 5–6 red dates

  • 1 tbsp goji berries

  • 4–5 pieces dried lily bulbs (optional)

  • 1–1.2 litres water

  • Rock sugar, to taste

  • Optional: 2 pandan leaves for fragrance


The instructions


step 1: Soak the Bird’s Nest

  1. Place the dried bird’s nest in a bowl of room-temperature water and soak for 4–6 hours or until softened.

  2. Gently rinse and remove any visible impurities or feathers using tweezers if necessary.

  3. Drain and set aside.

step 2: Prepare the Ingredients

  1. Peel and core the snow pears, then cut them into chunks or thick slices.

  2. Rinse the red dates, goji berries, and dried lily bulbs if using.

  3. Tie the pandan leaves into a knot if using.


Step 3: Steam the Snow Pear

  1. Prepare a steamer and bring the water to a gentle boil.

  2. Place the snow pear, red dates, lily bulbs, pandan leaves, and water into a heatproof bowl or steamed pear container.

  3. Steam for about 30–40 minutes until the pears become tender and fragrant.


Step 4: Add Bird’s Nest

  1. Add the soaked bird’s nest into the steamed dessert.

  2. Continue steaming gently for another 10–15 minutes. Avoid overheating as it may affect the delicate texture of the bird’s nest.


Step 5: Sweeten the Soup

  1. Add rock sugar according to your preferred sweetness.

  2. Stir gently until the sugar dissolves completely.

  3. Add the goji berries during the last 5 minutes of cooking.


Step 6: Serve

  1. Remove the pandan leaves before serving.

  2. Serve warm for a comforting treat, or chill in the refrigerator for a refreshing cold dessert.

  3. Garnish with extra goji berries if desired.
