Herb-Crusted Cod with Vegetable Mash

Light, wholesome, and full of flavor, this Herb-Crusted Cod with Vegetable Mash pairs tender, flaky cod with a fragrant garlic-herb crust and a creamy, naturally sweet mash of carrot and sweet potato. It’s a simple yet elegant meal that balances freshness and comfort in every bite. Perfect for a nourishing weeknight dinner or a feel-good weekend treat.


Ingredients


For the Cod Fish:

  • 400g cod fish fillets (about 2–3 pieces)

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 2 tbsp breadcrumbs (or panko)

  • 2 tbsp parsley, finely chopped

  • 1 tbsp lemon juice

  • Salt and pepper, to taste


For the Vegetable Mash:

  • 1 medium carrot, peeled and chopped

  • 1 small sweet potato, peeled and cubed

  • 1 tbsp butter (or olive oil)

  • Salt, to taste


Instructions


Step 1: Cook the Vegetables

  1. In a pot of boiling salted water, cook carrot and sweet potato for 12–15 minutes, until soft.

  2. Drain and mash with butter and a pinch of salt until smooth.

  3. Set aside and keep warm.


Step 2: Make the Herb Crust

  1. In a small bowl, mix garlic, breadcrumbs, parsley, lemon juice, salt, and pepper.

  2. Stir until evenly combined.


Step 3: Cook the Cod

  1. Pat the cod fillets dry with a paper towel.

  2. Heat olive oil in a skillet over medium heat.

  3. Place cod fillets in the pan and cook for 3–4 minutes on one side.

  4. Flip carefully, then sprinkle the herb mixture on top of each fillet.

  5. Cover and cook for another 3–4 minutes, until the fish is cooked through and flaky.


Step 4: Serve

  1. Spoon a layer of vegetable mash onto each plate.

  2. Place a cod fillet on top.

  3. Drizzle with extra lemon juice if desired.
