This Seafood Rice Dumpling recipe combines fragrant glutinous rice with premium seafood ingredients to create a lighter yet equally satisfying version of the classic zongzi. Perfect for sharing with family and friends during the festive season.

For the Rice
500g glutinous rice
2 tbsp light soy sauce
1 tbsp oyster sauce
1 tbsp cooking oil

150g scallops, halved
6 dried shiitake mushrooms, sliced
2 cloves garlic, minced
1 tbsp oyster sauce
1 tbsp light soy sauce
½ tsp sesame oil
White pepper to taste
Other Ingredients
Bamboo leaves (soaked and cleaned)
Kitchen twine for tying
Step 1: Prepare the Rice
Rinse the glutinous rice thoroughly and soak for at least 4 hours or overnight.
Drain and mix with soy sauce, oyster sauce, cooking oil, and white pepper. Set aside.
Step 2: Prepare the Seafood Filling
Heat a pan over medium heat and sauté the garlic until fragrant.
Add mushrooms and cook for 2 minutes before adding the prawns and scallops.
Season with oyster sauce, soy sauce, sesame oil, and white pepper.
Cook briefly until the seafood is just done. Remove from heat and allow the filling to cool.
Step 3: Wrap the Dumplings
Take two bamboo leaves and overlap them to form a cone shape.
Add a spoonful of rice, followed by a portion of the seafood filling.
Top with another spoonful of rice and fold the leaves tightly to form a pyramid-shaped dumpling.
Secure with kitchen twine.
Repeat until all ingredients are used.
Step 4: Cook the Dumplings
Place the wrapped dumplings in a large pot and cover completely with water.
Boil for approximately 2½ to 3 hours, topping up water if necessary.
Once cooked, remove and allow them to cool slightly before serving.
